The riskiest thing we do isn't on the menu.
It's who we buy from.
Thirteen years running this business, and the menu looks nothing like it did on day one.
Some items came and went.
A few left because a supplier did.
A few showed up because a grower walked in with something too good to pass up.
That's the part people don't see.
Most restaurants treat suppliers like vendors.
You order. They deliver. You pay. Done.
We treat ours like partners.
There's a difference and you can taste it.
When the farm a couple hours from here has a great season, we have a great season.
When they're short, we feel it the same week.
We're tied together. On purpose.
That's the risk.
A national distributor never has a bad tomato year.
A national distributor also never grew a thing.
The grower who knows our name picks up the phone when something's off.
The 1-800 line does not.
Some of the people we started with thirteen years ago are still with us.
We've grown together. Made it through a few bad years together.
You don't get that from an invoice.
Local isn't a sticker we slap on the menu.
It's a handshake we honor every single week.
We don't have suppliers.
We have people we're in business with.
Six OC locations. Thirteen years. Built on relationships.

Some Tuesdays you'll forget.
Not the ones where you sat down, the kids were happy, and you didn't have to be anything but present.
Those are the ones that stay.

I've been thinking about this a lot lately.
People assume we're in the sandwich business.
We're not.
We're in the business of being a part of someone's day.
Think about who actually walks through the door.
The family that needed somewhere everybody would actually eat without a fight.
The guy grabbing food before a run, and the one wrecked and starving after a surf.
The crew that just clocked out and wants a real meal before the drive home.
The office that trusted us to feed forty people for a meeting that mattered.
Different people. Different days. Different reasons.
Same thing underneath all of it.
They gave us a moment.
Brunch, Lunch, Dinner. A long day they needed a break from.
The sandwich is the easy part.
Good bread. Good meat. Slice it right.
The hard part is treating every one of those moments like it counts. Because to that person, it does.
You can copy a menu.
You can copy a price.
You can't copy what it feels like to be taken care of.
That's the whole thing.
That's been the whole thing since location one.
We're not trying to feed the most people.
We're trying to be the place they actually want to come back to.
Six locations later, that hasn't changed.
It's the only thing I refuse to let change.
And a huge part of that goes to our team.
They're the ones who make those moments feel like they count.

Funny thing about summer. You wait all year for it, then it's suddenly half gone and you can't point to a single slow night in the middle of it.
That's the part that stuck with me when we opened these doors. Everybody's chasing the season. Almost nobody's sitting still inside it.
We didn't build this to be one more stop on an already full day. We built it for the opposite. A reason to put the phones face down, let the kids get loud, and stay at the table longer than you planned to.
That's the whole reason behind Tuesday. Not a gimmick. Just one less thing on your plate so there's room for the part that actually counts.
The summer's going to move fast either way. Might as well catch some of it sitting down, with the people who make it worth slowing down for.
