In the spirit of the greats and Father’s Day we are running a steak frites & eggs. That’s right, not just steak n eggs, but steak FRITES n eggs. Composed by a greedy third culture child who wants more more more. Fun fact: “Steak n Eggs popularity skyrocketed in 1961 when NASA astronaut Alan Shepard famously ate steak and eggs for breakfast before the historic Mercury-Redstone 3 mission. It subsequently became the traditional pre-launch meal for generations of American astronauts.”

stuffed chicken au poivre: chicken thigh on giblet cornbread stuffing, sautéed chard, smoked pearl onions, cognac peppercorn sauce, fondant potato
The last time I made this giblet cornbread stuffing was during lockdown and it was a hit. Our government was bailing out airlines and hotels and most of our staff either stayed in LA or moved permanently home if they were from out of town. Maybe it was homesickness, or an ache to hug and affirm affections, an instinctive response to the winter chill, or the fourteen ingredients all tenderly tossed with love.
Thank you for popping by yesterday and architecting this video in all of twenty minutes - you are a magician.
