Even though I do catering and also am a Chef on our family run scuba diving vessel, always fun cooking at home for family. Quite the feast for Easter đŁ 7 people in all, lots of leftovers but that is a good thing, I wonât have to cook until Tuesday or Wednesday lol. Boneless leg of lamb roasted over potatoes, baked ziti, a combination of carrots, sweet potatoes, onions and parsnips, bbqâed spare ribs and cheesecake for dessert. I definitely was in a food coma after this meal. It was a two day cooking frenzy but fun!

I had the utmost pleasure of catering a wonderful wedding yesterday. Congratulations to Jack and Paul, may you have a wonderful life together and abundant happiness.
Menu:
Appetizers; caprese skewers, stuffed mushrooms, leek tartines on a toasted crostini
Salad; roasted beet salad with fresh greens, feta cheese, orange supremes and balsamic vinaigrette
Mains:
1) Roasted prime rib, brown butter mash potatoes, braised Brussel sprouts and sautéed asparagus
2) Coho salmon, jasmine rosemary rice, braised Brussel sprouts and sautéed asparagus
3) Eggplant Parmesan, braised Brussel sprouts and sautéed asparagus

Catering an event this week for PADI Corporate on the Cee Ray. They're in for a treat! Chicken Piccata over angel hair pasta served with sauteed zucchini and yellow squash with organic spring mix salad! yummy.

Anyone who loves Brussels Sprouts, or even if you think you don't like them try these, my recipe might change your mind.
This recipe for a side dish of Brussels sprouts with bacon and wine appeals to even those who claim to not like Brussels sprouts.

Yummy, and be done ahead of time.
French Toast Bake
Ingredient Checklist
1/2 cup melted butter (1 stick)
1 cup brown sugar
1 loaf Texas toast
4 eggs
1 1/2 cup milk
1 teaspoon vanilla
Powdered sugar for sprinkling
Directions
1. Melt butter in microwave & add brown sugar....stir till mixed.
2. Pour butter/sugar mix into bottom of 9 x 13 pan....spread around
3. Beat eggs, milk, & vanilla
4. Lay single layer of Texas Toast in pan
5. Spoon 1/2 of egg mixture on bread layer
6. Add 2nd layer of Texas Toast
7. Spoon on remaining egg mixture
8. Cover & chill in fridge overnight
9. Bake at 350 for 45 minutes (covered for the first 30 minutes)
10. Sprinkle with powdered sugar
11. Serve with warm maple syrup
