Dani Felton, beverage director for Blvd Steak restaurant locations in Calabasas and Sherman Oaks, admits that some patrons “can be intimidated” by savory cocktails, but the spirits-industry veteran sees the tide turning. “They’re intriguing,” she says. “They’re unique and fresh and interesting, and they can be superbalanced, even if they’re different.”
The Caprese aims to strike that balance with Grey Goose Vodka for a clean base, Campari for bitterness, a house-made tomato-and-basil simple syrup for herbaceous notes, and balsamic vinegar for tang. To enhance the tomato flavor, salt and pepper adorn a quarter of the martini glass rim, alongside a mozzarella cheese-and-basil garnish.
