Quince Brown Betty
For this dessert we gave ourselves the task of magnifying ‘s favorite aspects of a traditional Apple Brown Betty. Utilizing local quince while in season, well that just felt like a no brainer.
We started by filling our pie shell with alternating layers of pear preserves, apple butter, quince purée and laminated dough. Dust it with brown sugar and bake it until caramelized.
To finish made a quince and honey milk which we split using lemon juice and freeze it to create our quince whey and quince curd shaved ice.
Proud to say it hasn’t made it past the second bite on any of our guests plates.
