Winter citrus is at its best right now. Leave it to Chef Susana to put all these ingredients together and make it work. Creamy stracciatella, bright citrus, our house-cured lonza, a touch of heat from the vinaigrette, and fresh herbs. It’s one of those simple plates, but each component matters.
Lonza is a traditional Italian cured pork made from the loin—lean, delicate, and meant to be sliced thin. We proudly cure ours in-house.
