Classic Filipino Leche Flan Recipe
🍮 Ingredients:
For the Caramel:
• ½ cup white sugar
• 2 tbsp water (optional, helps melt evenly)
For the Flan Mixture:
• 10 egg yolks
• 1 can (300ml) condensed milk
• 1 can (370ml) evaporated milk
• 1 tsp vanilla extract
(Optional: 1–2 tsp lemon zest for extra aroma)
📝 Instructions:
📍Make the Caramel
1. In a llanera (or small round pan), add ½ cup sugar.
2. Heat on low, shaking gently until it melts and turns golden amber.
(If using a saucepan, pour the caramel into llaneras afterward.)
3. Set aside to cool and harden.
📍Prepare the Flan Mixture
1. In a bowl, lightly mix (do NOT whisk hard):
• 10 egg yolks
• Condensed milk
• Evaporated milk
• Vanilla
2. Tip: Do not create bubbles; bubbles cause holes in the flan.
3. Strain the mixture 2–3 times through a fine sieve for extra smoothness.
📍Pour & Steam
1. Pour the flan mixture into caramel-coated llaneras.
2. Cover each with foil.
3. Steam on low heat for 40–50 minutes
OR until set but still jiggly.
Tip: Keep the heat very low to avoid bubbles.
📍Cool & Serve
1. Let cool completely.
2. Refrigerate at least 2 hours (best overnight).
3. To serve, run a knife around the edges and flip onto a plate.
