We haven’t posted in quite a while, and during this stay-at-home order, we’ve had some time to play around with different kinds of baking, specifically the savory sort.

While trying out a recipe for traditional Spanish empanadas, we thought about mixing flavors, making a cross-cultural empanada, if you will. Following the same method to make the dough, we introduced Asian flavors. Marinated pork shoulder with hoisin sauce, honey, soy sauce, sesame oil, sambal olek (chili), garlic/ginger. Mixed the pork with thin, vermicelli rice noodles, onions and mushrooms. The results? Magic. Chinese BBQ pork empanadas. Sounds as delicious as it tastes.

Experimented with an alternate approach to pumpkin pie: PUMPKIN PIE COBBLER.
Ask any baker and there are a number of ways to make the crust stand up to the baking, but more often than not, the center/bottom can be soggy/under-baked.

This recipe made for a crisp, flaky, golden brown crust because it was all arranged on the top. All the bounties of a pumpkin pie delivered efficiently.

With the most celebrated feast a few days away, we are getting in the mood for dessert: Pumpkin Cream Pie on a Pecan Cream Cheese Pie Crust. (The crust is made of pecans, butter, and cream cheese, with a mix of salt and sugar to deepen the flavor.)
These are mini iterations, 5-inch pies. More than a slice, but not over the top to serve regret.
