This burger was honestly never supposed to become “a thing.”
It started because we trim a lot of briskets every week and at Moo’s we don’t like wasting good beef. The trimmings from our prime briskets are too good to throw away, so over time we created our own brisket blend for burgers using the same mindset we use for our barbecue.
Same care.Same standards.Same obsession over the details.
The patties get that hard sear and crust that almost reminds people of bark on a brisket, while still carrying a little bit of that smoke from the meat itself.
We keep the rest simple on purpose. American cheese, pickles, onion, special sauce, toasted potato bun. Nothing extra to cover up the flavor of the beef.
What’s funny is we’re not even a burger spot. Never planned to be. But somehow this burger ended up becoming one of the most talked about things on our menu and still sells out every day.
Pretty grateful for that.

This was the beginning.
Backyard, folding tables, no guarantees. Just a belief in what we were building and the people who showed up for us early. A customer sent this over and it hit. The same people who stood in our yard are still pulling up 9 years later. That kind of support… you can’t fake that. We’re grateful for every bit of it.
