3 cups all-purpose flour

½ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup (2 sticks) unsalted butter, softened

2 ½ cups granulated sugar

5 large eggs, room temperature

1 cup buttermilk, room temperature

½ cup sour cream

1 Tbsp vanilla extract

2 Tbsp red food coloring (liquid or gel)

1 tsp white vinegar

For the Glaze (optional):

2 cups powdered sugar

2–3 Tbsp milk or heavy cream

1 tsp vanilla extract

(Optional) cream cheese glaze: substitute 2 oz cream cheese softened + 1 Tbsp butter for richer flavor

Instructions:

Preheat oven to 325°F (160°C). Grease and flour a bundt or tube pan.

Mix dry ingredients: In a bowl, whisk together flour, cocoa, baking powder, baking soda, and salt.

Cream butter & sugar: In a large mixing bowl, beat butter and sugar until light and fluffy (about 3–4 minutes).

Add eggs one at a time, beating well after each addition.

Combine wet ingredients: In a small bowl, mix buttermilk, sour cream, vanilla, red food coloring, and vinegar.

Alternate mixing: Add dry ingredients to the butter mixture in three parts, alternating with the buttermilk mixture. Begin and end with flour mixture. Mix until just combined.

Bake: Pour into prepared pan and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Let cake cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

Glaze: Whisk glaze ingredients until smooth, then drizzle over cooled cake.

Crispy Coconut Chicken with Bang Bang Sauce!
Hey friends! Looking for a delicious and easy weeknight dinner? This Crispy Coconut Chicken with Bang Bang Sauce is perfect for all ages, but especially gentle on those who prefer simpler meal prep. It's packed with flavor and satisfying crunch!
**Ingredients:**
**For the Chicken:**
* 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
* 1 cup unsweetened shredded coconut
* 1/2 cup all-purpose flour
* 1 tsp garlic powder
* 1 tsp onion powder
* 1/2 tsp salt
* 1/4 tsp black pepper
* 2 large eggs, lightly beaten
* Vegetable oil, for frying
**For the Bang Bang Sauce:**
* 1/2 cup mayonnaise
* 1/4 cup sweet chili sauce
* 2 tbsp sriracha (or less, to taste – adjust for spice preference!)
* 1 tbsp rice vinegar
* 1 tsp honey or maple syrup
**Instructions:**
**Prepare the Chicken:** In a shallow dish, combine flour, coconut, garlic powder, onion powder, salt, and pepper. In a separate shallow dish, whisk the eggs.
2. **Coat the Chicken:** Dip each chicken piece in the egg, then dredge in the coconut mixture, ensuring it's fully coated.
3. **Fry the Chicken:** Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Carefully add the chicken pieces, ensuring not to overcrowd the pan. Fry for about 4-5 minutes per side, until golden brown and cooked through. (Use a meat thermometer to ensure internal temp reaches 165°F). Remove and drain on paper towels.
4. **Make the Bang Bang Sauce:** In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey/maple syrup until smooth and creamy. Adjust sriracha to your preferred level of spice.
5. **Serve:** Serve the crispy coconut chicken immediately with the Bang Bang sauce for dipping. Enjoy!
This recipe is easily adaptable – feel free to serve it over rice, quinoa, or with a simple side salad. Let me know if you give it a try! Happy cooking! .
