CLASSIC ALFAJORES DE MAICENA (Melt-in-Your-Mouth Dulce de Leche Sandwich Cookies!) ✨
Alfajores are the ultimate South American treat, featuring two incredibly tender, melt-in-your-mouth shortbread cookies sandwiched together with a thick layer of rich dulce de leche and rolled in shredded coconut. Thanks to the high cornstarch content, the dough is impossibly light and delicate. This oil-based version is simple to pull together and yields absolute bakery-quality results!
🛒 Ingredients
For the Cookie Dough:
200g cornstarch
50g all-purpose flour
80g powdered sugar (confectioners' sugar)
1 tsp baking powder
A pinch of fine salt
1 large egg
1 egg yolk
90cc neutral oil (like canola or sunflower)
1 tsp pure vanilla essence or extract
Zest of 1 lemon (essential for that classic flavor!)
For the Filling & Topping:
400g dulce de leche (thick, baker’s style or "repostero" works best)
Grated desiccated coconut (for rolling)

1️⃣ Prep the Dry Ingredients: In a large mixing bowl, sift or whisk together the cornstarch, all-purpose flour, powdered sugar, baking powder, and a pinch of salt.
2️⃣ Mix the Wet Ingredients: In a separate smaller bowl, whisk together the whole egg, egg yolk, vanilla essence, and fresh lemon zest.
3️⃣ Form the Dough: Pour the wet egg mixture and the oil into the dry ingredients. Mix gently until it comes together into a smooth, soft dough ball. (Be careful not to over-knead it, or the cookies will lose their tender texture!)
4️⃣ Roll and Cut: Place the dough on a lightly floured surface or between two sheets of parchment paper. Roll it out to an even thickness (about 5mm). Use a round cookie cutter to stamp out circles.
5️⃣ Bake: Transfer the dough circles to a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 7 to 9 minutes.
6️⃣ Cool: Remove from the oven. The cookies should remain pale and not take on much color! Let them rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. They are very fragile when hot.
7️⃣ Assemble: Once the cookies are completely cool, spread or pipe a generous dollop of thick dulce de leche onto the flat bottom of one cookie. Gently press a second cookie on top to create a sandwich, allowing the dulce de leche to squeeze slightly out the sides.
8️⃣ The Coconut Finish: Roll the sticky edges of the assembled alfajores in the grated coconut so it coats the exposed dulce de leche.
