The word Nihari comes from the Arabic word Nahar which means morning, thus the very name Nihari implies it is to be consumed early in the morning. Nihari is rumoured to have taken birth either in the back alleys of the Jamia Masjid in Delhi, or in the kitchens of the Nawabs of Awadh, toward the end of the 18th century at the decline of the Mughal Empire.⁠
Nihari starts off as a heap of dry spices frying in vegetable oil.⁠ Then, the meat ingredients (mainly beef shank / veal / chicken) are added. The slow-cooking stew is then stirred altogether. Nihari has a flavourful depth so deliberate that one can almost taste the unhurried and intentional consideration gone into putting the ingredients together.⁠ 🤤
The extravagant Nihari, with its oozing rich consistency, laden with tender chunks of veal and beef, was initially served as breakfast to the rich Muslim Nawabs of pre-partition India. Recipe essentially the same since its origin, the Nihari is garnished with a side-plate of fragrant sliced ginger, spicy green chilies, and a squeeze from a fresh lime or two. 🔥

Temperatures in a tandoor oven can get extremely high (upto 480 degrees Celsius / 900 degrees Fahrenheit) and they remain lit for a long time to maintain the ideal cooking temperature. 'Tandoori' refers to dishes cooked in the tandoor and includes popular South Asian dishes such as Tandoori chicken, Chicken Tikka and breads such as tandoori roti and naan.
