Our Wine Steward, Bert, has chosen Goldschmidt Vineyards Hilary Cabernet Sauvignon as his pick for this week.
Winemaker Notes: The fresh bright red hue with purple edges leads into aromas of black cherry with hints of raspberry and black plum. The mouth opens with delicious vanilla and mocha merged with the same cherry and plum found on the nose. Enticing traces of graphite and a mineral essence build down the length of the mouth, joining pomegranate and more vanilla in the finish.
Critical Acclaim: Stylish, with a flash of menthol giving way to streamlined cassis and cherry paste flavors wrapped in notes of red licorice, while hints of mesquite line the finish. Approachable now too.

Have you ever wanted to learn how to make a charcuterie board? If so⊠we have an incredible opportunity for you! Our Concierge, Donna, is considered the charcuterie specialist for all Pavilions and she is hosting a couple of charcuterie workshops. In these workshops you will learn everything from salami roses to cheese cuts, which items to place first, and the standard charcuterie elements and quantities broken down by person.
Each kit will include meats, cheeses, fruits, and accoutrements⊠enough food to create an $80 appetizer board for 6 people BUT your class fee will only be $60, courtesy of a sponsorship from Boarâs Head. You can bring your own board or build on one of our 12x12 black platters and you will be able to take your creation home with you at the end. We will be hosting two classes with only 4 people in each class. Both classes will be on December 14th. The first is from 3PM-4PM and the second is 5PM-6PM. Our next Virtual Tasting will be with Joseph Wagner. Joseph is a fifth generation Napa Valley winemaker with a dedicated passion for the business. Joeâs roots in the winemaking began at an early age, working with his family who founded Caymus Vineyards in Napa Valley.
In 2001 at age nineteen, he rolled up his sleeves and has yet to look back. His passion and natural talent for winemaking quickly became apparent after he started his own award-winning single vineyard Pinot Noir label, Belle Glos.
In January 2014, Joe formed Copper Cane Wine & Provisions, with the goal of focusing on innovations that have always captured his interest, and to find new ways to offer the highest quality products that satisfy consumersâ appetites for genuine craftsmanship.
