Here’s a new ingredient… TUNA SPINE JELLY!
It’s a perfect naturally jello texture w/ no fishy taste, just ocean light brine. Goes great with marinated salmon eggs and bright citrus.
I love the taste and fight it useful for raw applications. Roast th bones after and make broth :)

How to Properly Cut a Whole Bluefin Tuna 🐟🔪
As someone that knows one or two things about Tuna, here’s Part 2 “Tuna-versity 📚🐟”! Here I was able to film and narrate a clean/high yielding cut.
I encourage you to send this to anyone you know that catches tuna and wants to properly filet. Or a chef you know that could see it as a good saved reference.

When we first started Riviera Seafood Club we used to tell people our name is like the The Riviera Country Club, but swap “Country” with “Seafood”…
It’s a dream to be able to cut a perfect 200lb tuna under THE Riviera Country Club roof w/ the whole Ito family n friends!

The proceeds go to , an organization focused on helping families and communities rebuild after the Los Angeles wildfires that hit our lovely home of LA last year :(
