Cheesy Garlic Parmesan Chicken Meatloaf with Hidden Mozzarella Center
Ingredients:
1 ½ lbs ground chicken
¾ cup seasoned breadcrumbs
½ cup grated Parmesan cheese
2 large eggs
2 tsp minced garlic
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 cup shredded mozzarella cheese (for stuffing)
½ cup shredded mozzarella (for topping)
2 tbsp chopped parsley (for garnish)
2 tbsp olive oil (for brushing)
Directions:
Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
Divide the mixture in half. Press the first half into the bottom of the loaf pan and create a shallow trench.
Add 1 cup shredded mozzarella into the trench.
Cover with the remaining chicken mixture and press to seal edges.
Brush top with olive oil and bake for 30 minutes.
Remove from oven, sprinkle ½ cup mozzarella over top, and broil for 3–5 minutes until golden and bubbly.
Rest for 10 minutes before slicing. Garnish with chopped parsley.

12 jumbo pasta shells
1 lb ground beef
1 cup ricotta cheese

Directions:

In a bowl, combine ricotta, 1/2 cup mozzarella, Parmesan, egg, and Italian seasoning.
Stuff each shell with ricotta mixture and place in a greased baking dish.
Spoon beef sauce over shells and top with remaining marinara and shredded mozzarella.
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.

1 cup shredded cheddar cheese
6 slices cooked bacon, crumbled
1 packet ranch seasoning mix
