Macha verde: jalapeño with cilantro, mint, pistachios, and pepitas in olive oil. The color of la pradera after the rain, a limited-run salsa negra for spring. Dress it on fish tacos, grilled asparagus or cebollitas bien quemaditas, pollo asado, potatoes, or fresh cheese.

We made you something special: a salsa negra from one of our favorite chiles, the Pasilla Mixe de Oaxaca. Deeply smoky, with complex dried fruit flavor and medium heat, the chiles are combined with toasted sesame, almond, cocoa nib, and warm spices. Think flavors of mole in salsa negra.
