White Asparagus: each one tells the story of its experiences during one week at a hotel. Its interactions are affected by various personal and social issues. As the days pass, a darker complexity emerges among the asparagus, its employees, their wealthy associates, and the idyllic locale. Oh wait, that’s White Lotus. White Asparagus is much more intriguing and delicious. It is considered a delicacy—often called “white gold”—due to its labor-intensive cultivation, short seasonal availability (April to June), and unique, delicate flavor profile. Grown entirely underground to block sunlight, it stays pale and avoids turning green, resulting in a sweeter, less bitter, and more tender texture compared to its green counterpart. It’s on our seasonal menu right now and you must try it.
