Super Crispy Baby Eggplant 🍆 w Horseradish Beet Mayo. Quick and delicious recipe. Save it, make it and enjoy ☺️
INGREDIENTS:
3 baby eggplants
Flaky salt
1 cup all-purpose flour
1 tsp turmeric
2 eggs
1 garlic clove, minced
Salt and black pepper
2 cups panko breadcrumbs
Neutral oil, for frying
HORSERADISH BEET MAYO:
5 tbsp mayonnaise
1 full tsp grated horseradish with beets
TO FINISH:
Lemon zest
Chopped parsley
METHOD:
Cut each baby eggplant lengthwise into quarters, keeping the stem intact. Cut each quarter in half lengthwise again to create 8 wedges per eggplant, all still attached at the stem.
Season generously with flaky salt and place on a paper towel-lined tray for 30 minutes to draw out excess moisture and bitterness.
Heat the oil to 380°F (190°C).
Place the panko in one shallow tray. In a second tray, combine the flour and turmeric. In a bowl, whisk together the eggs, garlic, salt, and black pepper.
After 30 minutes, pat the eggplants completely dry to remove any remaining moisture. Dredge in the flour mixture, then the egg mixture, then coat evenly in the panko.
Fry until golden brown and crispy. Transfer to a wire rack or paper towel-lined tray and season lightly with salt while hot.
Mix the mayonnaise and grated horseradish with beets.
Serve hot with the horseradish beet mayo drizzled over the eggplant or on the side. Finish with lemon zest and chopped parsley.

To get to the location of the chef in Los Angeles, you can take the subway and get off at Union Station. From there, transfer to the Gold Line and take it to Little Tokyo/Arts District Station. Then walk for about 10 minutes to reach your destination.
