Today, Teo called me when I was in the dentist chair. I picked up and he goes- are you listening to the radio right now? He had been driving to our Long Beach location and he heard on the radio that Sonoratown made it into the Michelin guide today. I don’t know what to say besides, I am overcome with gratitude. We take this as a great honor but also an invitation to grow and improve everything we do. Thank you very much to everyone who has supported us over the years. Did you know we make our flour tortillas in house? We do! Every morning- starting at 3am- we get started for the day ahead. We use flour brought to us from in .diaz hometown, San Luis Rio Colorado, Sonora Mx 🇲🇽 We use his family’s recipe: which is just flour, salt, water and lard. Humidity in the air will sometimes affect this recipe and so when we notice flaws in the finished product- we get to tinkering. Sometimes the structure of the tortillas gets too delicate, dry or flaky. We have had to add more or less lard in order to improve the consistency. We let the dough rest and hydrate for a longer period. We even will add a portion of American flour to the masa at times in order to improve the texture. We will never stop tinkering because our goal is to never stop improving! We truly hope you enjoy the product of our effort 🩷 from Sonora to LA 🩷 with lots of love!

When we opened back in 2016- we hoped to pay homage to our favorite tacos that we had ever eaten. Back then, this style taco could only be found in .diaz hometown, San Luis Rio Colorado, Sonora Mexico- at Teo’s brother-in-law’s taqueria, called Every day we work to try and come closer to the source material back in Sonora. We will never taste exactly the same, but we are driven to bring the flavor and quality of our tacos asymptotically closer to the real thing with every taco we prepare. We’re so happy to be recognized by the incredible team at LA Taco for our crispy tripa. Thank you for honoring us, it’s our pleasure to share our favorite tacos with everyone here in LA. Thank you for all the work you have done this year to keep us informed- it’s an honor to serve you and the good people of LA & Long Beach 🩷
