No agency defines it. No test you have to pass. Any roaster can print it — including us.
So here's what we actually do: select for it at origin, roast for it, and Q-grader inspect through every roast. That's a process, not a certification.
If a bag says low acid and the brand can't tell you what they did to get there, the words are decoration.
