Step-by-Step Instructions:
Pull the Espresso: Grind and tamp your coffee beans to brew a fresh double shot of espresso. The process should take roughly 25 to 30 seconds. See my video on how to make a low acid latte for more instruction on this.
Steam the Milk: Pour cold lactose free organic milk(or if you’re allergic to dairy, your safe alternative) into a small steaming pitcher, stopping just below the bottom of the spout. Incorporate just a tiny amount of air (aerating for 1–2 seconds) to create a velvety, "paint-like" texture with minimal foam.
Heat and Groom: Continue steaming until the milk is just warm to the touch, around 120° to 140°F (50° to 60°C). Tap the pitcher on the counter and swirl to eliminate any large bubbles.
Pour and Serve: Pour the freshly brewed espresso into your small glass, then gently pour the steamed milk into the center to achieve that signature 1:1 ratio. Drink it immediately while the temperature and crema are at their peak.
