Leidenheimer Baking Company is a historic, family-owned bakery based in New Orleans, Louisiana, best known as the city’s largest and most iconic maker of po’boy bread — the crisp-crusted, soft-interior French loaves that are essential to traditional New Orleans po’boy sandwiches. 
• 🥖 Founded: 1896 by George Leidenheimer, an immigrant from Deidesheim, Germany. 
• 📍 Location: Originally on Dryades Street, the bakery moved in 1904 to its longtime home on Simon Bolivar Avenue, where it remains family-owned and operated more than a century later. 
• 🍞 What They Do: Leidenheimer specializes in traditional New Orleans French bread and related products (including po’boy loaves, pistolets, and muffuletta rounds). Its bread is distributed locally throughout the Gulf South and nationally and is a cornerstone of New Orleans food culture. 
The company has played a major role in defining the texture and quality of authentic po’boy sandwiches and continues to be a beloved culinary institution in the region.

That Gumbo‼️ We call it the ‘Sweep the Kitchen’ 🐊⚜️🐊⚜️
Gulf Shrimp, Special Lump Crab Meat, Smoked Andouille Sausage, Chicken Thigh and Okra. All served with medium grain white rice and French Bread slices.
Gumbo is the epitome of ‘From the Ground Up’ or ‘Start with a Sturdy Foundation’…..
The dish itself is sensitive, time consuming and elaborate. You can’t skip or rush steps when preparing this dish.
The initial foundation is established once the roux begins to marry. Equal parts in weight of flour/oil to make a somewhat pancake batter consistency. Heat is applied low and slow to fill the room with a nutty aroma. This step can’t be rushed or taken lightly. It’s the foundation of the entire house we’re building.
Once the roux is lightly toasted to the color of a Grizzly Bear you know she’s ready for the bricks to start building.
The diced onions should hiss as they first touch the Roux that now resembles Brownie Batter. Followed with the remaining members of the Holy Trinity, Celery and Bellpepper. Spice it up with touches of Jalapeño and Serrano peppers. I recommend people to look away when I add the Garlic. Almost embarrassing how much I prefer to use. Hints of fresh Thyme and Green Onion at the end to give it that extra Fresh Love.
Once the veggies sweat and begin to lose their composition it’s ready to Spice it up. We begin with Ground Thyme, Granulated Garlic, Coarse Ground Black Pepper, Tony’s Chachere’s, Filé, Cayenne Pepper, Crushed Red Pepper, Hot Sauce and Salt.
Once finished seasoned she’s ready for the Stock

Two whole Softshell Crabs placed lightly on the best Po’boy bread on the Planet from straight outta New Orleans.
They’ve been supplying the City with Po’boy bread since 1896‼️

That Fried Catfish Po’boy! Y’all have been smacking these down‼️
Fried catfish nuggets piled high nestled in between that light, crisp, buttery Po’boy bread. Dressed as classic as it gets lettuce, tomato, pickle and our signature “Sissy’s Sauce” house Remoulade to tie it all together.
We have other fried Po’boys as well as blackened Po’boys if you’re tryna stay away from that fry grease but I tell ya,, something about that fried crunchy protein in between that bread that’ll have ya coming back‼️
We’re open today at noon! Last day of the week to get your Cajun Cravings on! We’ll be closed tomorrow to rest a bit.

Shoutout to and for the feature article‼️
That was extremely cool to be a part of and we truly enjoyed meeting so many new faces these past two weeks since the article dropped.
Thank you to the city and the people that make this city what it is‼️
We’re here for y’all and look forward to continue to build, learn, grow and prosper‼️
We’ve been at this journey for quite some time but the funny thing is it feels like it’s just actually beginning.

“Sissy’s Sweets”
That Bread Pudding has been selling out daily‼️
Also the Gumbo and Red Beans sell out daily.
We make our Stock and Roux fresh daily. We make the pots to the tip top but every day it sells out‼️
We apologize to those that come for the Gumbo or Red Beans and it is already gone but we will continue making fresh pots daily to ensure quality and consistency.
If you swing by after 5/6pm there’s a possibility there will be no more Gumbo in the pot and we apologize about that but there’s one way to guarantee we got the Gumbo,, Pull up at 12 Noon when we open‼️
Can’t wait to see everybody today,, we gotchya‼️

Them Red Beans n’ Rice with that cornbread. Some things go so well together it should be forever. We’ll keep pushing that pair as long as time allows us.
It’s almost like cake n ice cream if you get our drift‼️ Similar textures and fun.
I wrote a poem about Red Beans in the first grade. I only remember a bit of it but I believe my mother still has the paper.

We use it to pair with all of our fried items. We also use it on all of our Po’boys.
It goes good on pretty much everything. We wouldn’t judge if you even took a lil sip out the bottle‼️
