Garden Lentil Shepherd’s Pie with Zucchini, Corn & Parmesan Potato Crust
Ingredients:
1 pound brown or green lentils
2 pounds potatoes, peeled and cubed
1/2 cup grated Parmesan cheese
2 tablespoons butter
1 tablespoon olive oil
1 cup diced onion
1 cup diced zucchini
1 cup corn kernels
1 cup diced carrots
2 cloves garlic, minced
1 cup vegetable broth
2 tablespoons tomato paste
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:
1. Cook the lentils in water until tender, then drain well.
2. Boil the potatoes until soft, then mash with butter and Parmesan cheese.
3. Heat olive oil in a large skillet and cook the onion, zucchini, corn, carrots, and garlic for 5–7 minutes.
4. Stir in the lentils, vegetable broth, tomato paste, thyme, salt, and pepper, then simmer for 10 minutes.
5. Transfer the lentil mixture to a baking dish and spread the mashed potatoes evenly over the top.
6. Bake at 400°F for 25–30 minutes until the potato crust is golden and the filling is bubbling.
