Is authenticity a thing of the past?

I used to think quality and homemade dishes were quintessential for success in the restaurant industry. Maybe for a time it did. But now, the old school restaurants who follow these traits have become a dying breed, as labor and food costs keep rising with the times. The restaurant industry is always changing, and it seems that operators need to "cheat" by buying ready to consume products, greatly reducing their labor, prep, and ticket times therefore increasing their profit margins. Has the time to chef it up come and gone? Is this a new age of reheated meals by way of can or freezer?
2 similar restaurants cooking similar cuisines. One does everything by hand, using homemade sauces, dressings, and refreshments. The other has everything store bought and quick prepped. The quality is unmatched between the two stores, but spot A has to work and spend double or even triple to match spot B's output for the same dish. So they both end up at the same finish line, but which one made more profit, and which one struggled to keep a profit? Did they even make a profit?... From a business standpoint, it's no wonder legacy restaurants like ours are closing down.
We will continue to keep our 40 year tradition intact by bringing you fresh quality products and keeping it authentic until our doors close. Pinky promise.
