The last two Japanese sakes from Saga Prefecture we would love to introduce are from Koimari Shuzo. Both bottles feature labels that are thoughtfully designed, each carrying symbolic meaning.
🌸KOIMARI PEONY Junmai Daiginjo – The Seigaiha and Peony motifs symbolize elegance and prosperity. This sake offers a bright, floral aroma with a smooth, refined finish.
🕊️KOIMARI BLUEBIRD Junmai Daiginjo – The Wagtail motif represents joy and good fortune. It features a gentle, fruity aroma with a similarly smooth, elegant finish.

Throughout the month of November, UKA will be featuring an exclusive selection of premium sake from Saga Prefecture.
These exceptional brews hold a special place in Chef Mitsue’s heart, as they come from his beloved hometown.
We are honored to present the first three expressions from Koueigiku Shuzo:
🍶 “Hello! Omachi” – Crafted from the esteemed Omachi rice, this sake is fresh and delicately effervescent, revealing graceful notes of grape, pear, citrus, peach, and almond cream.
🌸 “Harujion” – Brewed from the rare Shun’yō rice, it offers elegant aromas of muscat, grapefruit, and lychee, leading to a refined, refreshing finish reminiscent of a Sauvignon Blanc.
🍊 “Tasogare Orange” – Vibrant and citrus-forward, with layers of mandarin and grapefruit, gentle umami, and a beautifully balanced bittersweet finish.
