━━ INGREDIENTS ━━
Dough
• 3 cups (360g) bread flour
• 1½ tsp (9g) salt
• 1 tsp (3g) instant yeast
• 1 cup + 3 tbsp (270g) warm water
• 1 tbsp (15g) olive oil
Sauce
• 2 tbsp (25g) olive oil
• 4 garlic cloves, minced
• 28 oz (794g) crushed tomatoes
• 1 tbsp + 1 tsp (17g) sugar
• 1 tsp salt
Assembly
• 1 tbsp (12g) olive oil
• 3 cups (340g) shredded brick cheese
• 2 oz (60g) pepperoni (optional)
• ½ cup (28g) grated Pecorino Romano
• Red pepper flakes (optional)
━━ INSTRUCTIONS ━━
1. Mix flour, salt, yeast, water & oil. Rest 15 min.
Fold dough 3–6 times, rest 15 min, then repeat. Let rise
1–1½ hrs, until slightly puffy.
2. Sauté garlic in oil for 30 sec. Add tomatoes, sugar &
salt. Simmer 20 min, then cool.
3. Heat oven to 500°F. Oil a 9×13-inch pan. Add dough,
stretch to edges, cover and rest 45–60 min.
4. Bake 10–12 min until dough is set. Add cheese around
edges and over center. Top with about 1⅓ cups sauce and
pepperoni.
5. Bake 12–14 min until edges are deep brown and crisp.
Loosen from pan and transfer to a rack. Cool briefly,
top with Pecorino & red pepper flakes, then cut into squares.
