The way we debuted our Cacio e Pepe sauce is still one of my absolute favorite ways to enjoy it. Cavatelli isn't the traditional pairing for Cacio e Pepe, but something about the rough grooves and slightly springy texture just ties the fatty savoriness of it all together.

Brown butter and rendered pancetta fat form the base layers of flavor for the Orso mushroom ragu. As we cook down the mushrooms they release their liquid and rehydrate with the new flavors, giving the whole thing depth and complexity that the rest of the ragu builds off of. Bucatini is an excellent choice (and a super photogenic one), but there are no wrong answers here... only pastabilites ;)
