Crispy, crunchy, and (most importantly) cheesy 🧀 Meet your new favorite salad — Summer Greens with Flagship Reserve Frico 🥬

– Recipe –
Frico
* 1 cup Beecher’s Flagship Reserve cheese, finely grated�

Dressing
* 2 tablespoons finely chopped shallot
* 1 small garlic clove, grated
* 1/2 teaspoon honey
* 1 teaspoon kosher salt
* 1/4 teaspoon freshly cracked black pepper
* 3 tablespoons red wine vinegar
* 1/3 cup extra-virgin olive oil
* 1 tablespoon crème fraîche
* 1/2 cup finely grated Beecher’s Flagship Reserve cheese�

Salad
* 1 head butter lettuce, washed
* 1 1/2 cup watercress, washed
* Fresh herbs, such as parsley, tarragon and basil

Frico
1. Preheat the oven to 325°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
2. Spread the grated Flagship Reserve cheese in a thin, even layer—approximately 7” x 10”. Gently tap the edges of the pan to help distribute the cheese evenly.
3. Bake for 10-12 minutes, checking occasionally to ensure the cheese is browning evenly. If needed, rotate the pan halfway through cooking.
4. Once fully melted, golden brown and most bubbling has subsided, remove from the oven and allow to cool. As it cools, it will harden and become crisp.

Dressing
1. In a medium bowl, combine shallot, garlic, honey, salt, pepper, and red wine vinegar. Stir to mix.
2. Slowly pour in the olive oil in a steady stream while whisking constantly until the mixture is emulsified.
3. In a separate bowl, whisk together the grated Flagship Reserve and crème fraîche. Slowly add the vinaigrette, whisking until the dressing is smooth and fully combined.

Salad
1. In a large bowl, toss together the washed butter lettuce, watercress, and fresh herbs.
2. Drizzle with about 1/4 cup of the prepared dressing (or to taste), and gently mix until the greens are evenly coated.
3. Crack the cooled frico into bite-sized pieces.
4. To serve, pile the dressed greens onto a platter, scatter with frico crisps, and finish with freshly cracked black pepper. Enjoy!

Have leftover ham after the holiday weekend? May we make a suggestion? Ham & Hatch Jack Sliders.

Layers of thick-cut ham & our just-a-hint-of-heat Hatch Jack make these sandwiches irresistible. And did we mention they are on the table in 30 minutes? Consider dinner covered.

Recipe:
4 tablespoons unsalted butter, melted
2 teaspoons minced dried onion
1 teaspoon poppyseeds
2 teaspoons Worcestershire sauce
1.5 teaspoons honey
3 tablespoons Dijon mustard
12 Hawaiian Rolls (1 package)
12 oz Beecher’s Hatch Jack cheese
6-8 slices cooked ham, about 1/2 pound

1. Preheat the oven to 350°F.
2. Combine the melted butter with the minced onion, poppy seeds, and Worcestershire sauce. Set aside. In a separate bowl, combine honey and Dijon mustard.
3. Line a 9”x 13” baking dish with a sheet of parchment paper.
4. Without separating the rolls, slice the sheet of rolls in half horizontally. Spread the bottom half with honey and Dijon mustard mixture on the cut side, then place in the lined baking dish.
5. Cover the rolls with half the sliced Hatch Jack cheese, followed by the sliced ham. Add the remaining cheese, followed by the top half of the rolls.
6. Generously brush the top & sides of the rolls with the butter mixture.
7. Cover with foil and bake for 25 minutes, until cheese is melted. Remove the foil, and toast for an additional 5 minutes, until tops are golden brown.
8. Carefully lift the rolls out of the pan, serve warm & enjoy!

Hosting this spring? Steal the spotlight with these Cheesy Fig Jam Pull-Apart Rolls.

Sweet, savory, and irresistibly gooey, these rolls are filled with our Dulcet double-cream cheese and rich fig jam that caramelizes as they bake—making every bite a delicious surprise. ✨

Cheesy Fig Jam Pull-Apart Skillet Rolls
- 24 oz store-bought fresh pizza dough
- 1/4 cup fig jam
- 7 oz Dulcet Beecher’s Handmade Cheese, grated
- 1 egg white

1. Preheat oven to 400°F & butter a 10-12" cast-iron skillet.
2. Divide room-temperature dough into 12 balls (about 2 oz each).
3. Gently stretch each portion of dough into a 4-inch round. Spread with 1 tsp fig jam + 1 Tbsp cheese.
4. Once filled, fold in half then half again. Roll into balls, and nestle into cast-iron skillet. Cover and let rise for 45 mins.
5. Brush with egg white, and bake for 25 minutes.
6. Top with remaining cheese, and bake for 5 more minutes.
7. Serve warm & enjoy!
